Sweet and Salty Granola

Makes 1 ½ lbs


Ingredients 

2 ½ cups old fashioned oats

⅓ cup all purpose flour

½ cup chopped pecans

½ cup sliced almonds

½ cup raw chopped cashews

½ cup unsweetened flaked coconut

1 ½ tsp kosher salt

1 ½ tsp cinnamon

¼ cup coconut oil, melted

½ cup maple syrup 

5 Medjool dates, pitted and chopped


Directions

Preheat the oven to 350 F. Line a sheet pan with parchment paper and set aside.


In a large bowl combine all dry ingredients and mix thoroughly.  Add coconut oil and maple syrup and stir to coat the dry mixture.  Place on an already prepared sheet tray and add to the preheated oven. Cook for 15 minutes, remove from the oven, tossing ingredients so they toast evenly. Place back in the oven for 10 minutes more and repeat the process.  Add the dates after the 10 minutes and toss everything evenly again and place in the oven for 8 minutes more, or until everything is golden brown.  Will keep in the pantry for up to 2 weeks and in the freezer for up to 3 months.
